Hands down the most tender cut in the whole cow if done properly. We once had a melt-in-your-mouth braised tongue done at a Japanese steakhouse and we were floored. Been chasing that recipe ever since. There is only one tongue per share so you are unlikely to receive one in a 1/8 share box. 1/4 and 1/2 shares no guarantee but that much more likely… you catch our drift? Between 1.5-2.5 lbs.
